If Eloise Hawking and Charles Widmore are Daniel Faraday's parents, Who carries the last name Faraday? Should Daniel's last name not be either Hawking or Widmore?

Probably chosen by Eloise or maybe she married an outsider named Hawking.. never know..... maybe chosen to hide their identity.. Hawking may be her chosen name too for identity hiding purposes..
